New Years Eve Menu

I needed something easy to prepare during the day and fatty enough to give sustenance for the dance floor. I also figured we needed something lucky for the new year.  What did we have?

NACHOS!

Slow Cooked Black Eyed Pea and Collard Green Dip
Soak a bag of beans overnight and wash.
Put in crockpot beans, diced onion, two or more dried chili peppers, two bay leaves, one diced red pepper, 2 bunches of deveined and ribboned collards.  You could put in a hamhock but I had bacon. I left them whole so people didn’t have to eat it- I don’t like slow cooked bacon.  Cover with chicken broth. Turn it on lw and walk away for 8 hours

Velveeta Cheese Dip in the slow cooker
Put in two big blocks of velveeta, two small cans of green chilis, a jar of salsa maybe an hour before party. Mix as it melts.  This weird dish is just too good for words. It’s wrong.

For the fixins I had the best chips, Jaunitas, pickled peppers and sour cream.

Other people contributed and Natalie brought homemade fortune cookies. It was a great night but I only took one picture.
